Le malt Cara 200 MD, une vari\u00e9t\u00e9 caram\u00e9lis\u00e9e tr\u00e8s fonc\u00e9e, est produit dans un tambour de torr\u00e9faction. Apr\u00e8s la caram\u00e9lisation, le malt est soumis \u00e0 un processus de s\u00e9chage minutieux \u00e0 des temp\u00e9ratures \u00e9lev\u00e9es, ce qui renforce son go\u00fbt sucr\u00e9 et lui conf\u00e8re une teinte sombre et profonde.<\/p>\n

Privil\u00e9gi\u00e9 par de nombreuses brasseries belges, ce malt est un ingr\u00e9dient courant dans la production des bi\u00e8res d’abbaye.<\/p>\n

Comme tous les malts caram\u00e9lis\u00e9s, Cara 200 MD contribue positivement \u00e0 la stabilit\u00e9 de la mousse, m\u00eame lorsqu’il ne repr\u00e9sente que 5 % de la masse de grains.<\/p>\n

Ce malt caram\u00e9lis\u00e9 particulier peut \u00eatre utilis\u00e9 dans des quantit\u00e9s allant jusqu’\u00e0 15 % de la masse totale des grains dans les processus de brassage.<\/p>\n
