Angel Yeast KO is a Kölsch-style ale yeast developed for producing clean, delicate beers with a lager-like fermentation profile. When fermented at the lower end of its temperature range, KO delivers a very neutral aroma, restrained ester production and a crisp finish, while retaining the flexibility of an ale yeast.
KO is designed for brewers seeking the balance between ale fermentation simplicity and lager-style cleanliness, making it ideal for Kölsch-style beers and other clean ales requiring high drinkability and subtle yeast expression.
