LalBrew Nottingham™ is an English-style ale yeast meticulously chosen for its exceptional performance and versatility. Displaying a neutral flavor profile and consistent performance across a wide range of fermentation conditions, LalBrew Nottingham™ stands as an ideal house strain, capable of producing an extensive array of beer styles. Through moderate expression of β-glucosidase and β-lyase enzymes, it promotes hop biotransformation, enhancing hop flavor and aroma. Originally selected from the Lallemand Yeast Culture Collection in 1992 when Lallemand Brewing was founded, traditional styles brought to life by this yeast strain include but are not limited to Pale Ales, Ambers, Porters, Stouts, and Barleywines. Additionally, Lallemand LalBrew Nottingham™ can be employed in creating Golden Ale, Kölsch, Lager-style beers, IPA, Imperial Stout, among various others. Its stress-tolerant nature makes it suitable for high-gravity brewing, sour beer production, restarting stuck fermentations, and other challenging fermentation conditions.
