Kveik, a term hailing from Norway, translates to ‘yeast’ and carries a rich heritage within the Norwegian farmhouse brewing culture. This traditional form of yeast was historically preserved by drying techniques and handed down through the ages from one generation to the next, embodying the essence of time-honored brewing methodologies. The LalBrew Voss™ variety, sourced from Sigmund Gjernes in Voss, Norway, is a testament to these ancestral practices. Sigmund has been a steward of this yeast strain since the 1980s, preserving it in the traditional manner and kindly sharing it with the broader brewing community. LalBrew Voss™ is renowned for its versatility, thriving across a broad fermentation temperature spectrum of 25 – 40°C (77 – 104°F), with an ideal range of 35 – 40°C (95 – 104°F) where it performs exceptionally well. This strain is notable for its rapid fermentation capabilities, often reaching full attenuation within a mere 2-3 days when kept within its optimal temperature range. Regardless of the temperature, Lallemand LalBrew Voss™ imparts a consistent flavor profile, marked by a clean base with light, fruity undertones reminiscent of orange and citrus.
