Released in 2012 by Hop Breeding Company, Mosaic is the daughter of Simcoe and one of the most complex aroma hops available — a true kaleidoscope of tropical fruit, blueberry, citrus, pine and earthy, dank herbal notes. With alpha acids typically between 11 and 14%, it works as both a clean bittering hop and a bold aroma powerhouse, though brewers prize it above all for late additions and dry hopping. Endlessly layered and instantly recognisable, Mosaic has become a cornerstone of modern IPAs, hazy pale ales and any beer chasing depth and complexity.
